
Some people are not big fans of salmon. I'm one of them. But this "salmmich" really made me reconsider! Simple grilled cheese sandwich with some not so simple substitutions. Who-da-thunk? Critics rave about this sandwich!
WHOLE WHEAT BREAD
Trader Joe's CHIPOTLE PEPPER HUMMUS
Trader Joe's SMOKED SALMON
Trader Joe's BROCCOLI-SLAW
GORGONZOLA CHEESE
BUTTER
PICKLES
Heat griddle or frying pan over medium high heat. Spread thin but even layer of hummus on two slices of bread. On one slice, crumble or slice gorgonzola cheese. Layer fresh salmon onto other slice and sprinkle with broccoli-slaw. Close sandwich and butter the top outside slice of bread. Lay the buttered side into frying pan or onto griddle. Let cook until nice and brown (it's just enough time to clean up and put everything away). Flip to other side and cook for a slight bit less amount of time. Plate and cut in half and garnish with pickles. Great summer lunch or light dinner with some soup!
